Hojicha
Hojicha, or roasted green tea is the most quintessential Japanese tea that defines their uniqueness. This traditionally is a farmers tea as the wealthy aristocrats of Japan would take finer tea cultivars and first flush for themselves. The farmers creativity transformed this once bitter Yabukita and began to fire roast it to dramatically change the flavor to have dark chocolate notes. The roasting process, much like with Espresso, greatly reduces the caffeine level and also creates natural Pyrazin which is good for circulation. The Japanese drink this normally at night or after a meal.
